KOTOPOULO ME PATATES STI GASTRA LEMONATO
Κοτόπουλο με Πατάτες
στι Γάστρα Λεμονάτο
(Chicken with potatoes in a Clay Pot with Lemon)
Loulla’s recipe

One-Pot Chicken! A classic family favourite. Food cooked in Gastra is a favourite method of cooking in Greece. This One-Pot meal is slow roasted in a πήλινη γάστρα (Clay Pot) or a Dutch Oven, with only a few ingredients. Incredibly easy to make, very light and flavoursome and a delicious meal that the whole family will love, trust me on this!
You could also make it with lamb, but remember, it needs longer cooking. In my house we usually have this dish with Greek yoghurt and a salad, but you could have it with your favourite vegetables, don’t forget some crusty bread!

Heat 4 Tbsp of olive oil in a frying pan, season the potatoes lightly with salt, pepper, paprika and fry them in two batches gently until lightly brown, and place them in the pot.
Season the chicken and fry the same way, adding a few sprigs of thyme, until chicken is lightly browned then place on top of the potatoes.
Remove most of the oil from the frying pan apart from 1 tablespoon, add the garlic and flour and stir fry for a few seconds to cook the flour, then add the mustard, wine, lemon juice and honey. Mix well and pour the chicken stock and bring to the boil.
Pour the sauce over the chicken and scatter the lemon quarters and bay leaves with few more sprigs of thyme then sprinkle with a little oregano.
Cover the pot with the lid and place in the preheated oven for 30min.
After 30 minutes remove the lid, taste and adjust seasoning add more lemon juice or water if needed, and place back in the oven without a lid and cook for another 20 minutes or until chicken is golden. Garnish with parsley and take the pot to the table, so everyone can help themselves.
Enjoy! Καλή όρεξη!
